Ishimago Honten is a Japanese natural shoyu soy sauce and miso brewer that takes pride in their genuine, handcrafted products. They utilize only traditional production methods to create exceptional soy sauce, miso, and tamari, and have over 150 years of experience in the craft.

This barrel-aged rice miso paste is exceptionally unique. The distinct flavor profile of barrel-aged soy sauces, miso pastes, and tamari is directly reflective of the barrels and storehouses they are aged in. Unique strains of fermentation bacteria live in the wooden planks of the barrel, and the beams of the storehouses - the result is that products aged anywhere else will never taste the same.

This miso has been carefully aged in Ishimago's "Storehouse Number 5", a building from the early Taisho period that has been designated a national cultural property by the Japanese government. This living structure is home to billions of unique bacteria that have been naturally fermenting Japanese sauces and seasonings for decades, imparting a unique flavor that can't be replicated.

This miso has a mild flavor, making it ideal for children, and those not yet used to miso, and the fermented flavors of Japanese cuisine. It has naturally sweet notes, and has been made using local rice grown in Akita prefecture. This miso was developed to try to recreate the flavor of homemade miso from rural parts of Akita prefecture, and will bring something truly special to any dish you incorporate it in.
